Chef Sun Wenlin delivers Chennai’s best seafood on a platter.
The kitchen with its flaming woks is at the very heart of Stix, Hyatt Regency’s signature Chinese restaurant. It’s where you’re most likely to find Chef Sun Wenlin busy at work. He does make the occasional appearance around tables with his shy smile but he’s happiest when he’s in the kitchen. Hyatt’s F&B team tell me that he’s equally at home in Chennai’s fish markets. It reminds him of his coastal hometown in China. It’s why he decided to put the city’s fresh catch of the day under the spotlight in the restaurant’s latest food promo.
The menu is refreshed everyday and depends entirely on what he’s able to source from the market. The opening night’s menu featured the most scrumptious crispy prawns – fresh bite-sized prawns served with scallion sauce. It was our favourite dish on the menu. If prawns are your scene, we’d also recommend the steamed prawn flavoured with preserved black bean. Other highlights include the sea bass served in a fiery dou ban jiang sauce and fried king mackerel with a pickle chilli sauce.
Aside from the daily menu, you can order staples, starters (we love their crispy fried lotus stems), dimsums – give the Chicken Har Gao a shot, off the restaurant’s regular menu. And do stay for dessert. The Stix version of fried ice-cream – a large ball (as opposed to the bite-sized mini balls that you normally find at other restaurants), with a bowl of chocolate sauce is worth checking out. And just in case you’d rather not do an Oriental dessert, you can ask for Tiramisu from Focaccia next door.
